GOG Recipe: Broccoli & Horseradish Soup
Here’s a recipe from our very own Gog Kitchen which uses the finest ingredients from our Shop and Delicatessen. It’s quick, easy to follow, and the perfect solution if you start to veer away from those pesky New Year promises!
From the Shop
300g chopped Broccoli Florets & Stalks
1 chopped Medium Onion
200g chopped Potatoes
1 Tbsp. Tracklement’s Strong Horseradish Cream
850ml Essential Cuisine Vegetable Stock
Tbsp. Farmer Brown’s Rapeseed Oil
Tbsp. chopped fresh Parsley
Tbsp. chopped fresh Chives
From the Deli
2 Tbsp. Longley Farm Double Cream (optional – depending on how healthy you want to be)
Method
1. Cook the onion in a tbsp. of rapeseed oil until soft
2. Add the broccoli, potato and vegetable stock then bring to boil and simmer until the vegetables are soft
3. Blend until smooth
4. Add the strong horseradish cream and half of the herbs
5. Add the double cream (optional)
6. Serve with the remaining herbs and a few broccoli florets for decoration
