COOLEA: A YELLOW SLAB OF IRISH LOVE
Coolea is a staff favourite here at Gog Magog and Marcus is a huge fan.
The cheese is based on a Gouda recipe and is handmade on a small mountain farm by Dick and Sinead Williams in Coolea, West Cork. Dicky’s father started making the cheese as a hobby back in 1979 and he has followed in his footsetps but turned into his business and has been making it for 24 years.
