Gog Recipe: Sweet Potato Salad
This Sweet Potato Salad developed here onsite by our Gog Kitchen Team is full of flavour and so easy to prepare. It makes a delicious addition to a picnic or the perfect accompaniment to your next barbecue.
From the Grocery
2 large Sweet Potatoes
2 Red Onions
1 bunch Spring Onions
1 bunch Chives
Olive Oil
Salt
Pepper
From the Delicatessen
1 Tbsp. Honey
From your Larder
1 Tbsp. Sherry Vinegar
Method
1. Peel and dice the sweet potatoes then toss them in a generous splash of olive oil and season with salt and pepper
2. Spread the sweet potatoes out on a baking tray and roast at 180°C for 15-20 minutes or until they are tender and slightly coloured
3. Peel and finely dice the red onions
4. Snip the chives and mix with the red onions in a bowl
5. Whisk the honey, sherry vinegar and a tbsp. olive oil together with some salt and pepper
6. When the potatoes are almost cool, mix them with the onions and chives then gently fold through the dressing
